During the 19th century, anyone who kept an inn or tavern where liquor was served was required to file a bond with the County Clerk, attesting that the landlord was of good character and had the support of a number of freeholders in his town. Yates County has retained these bonds, known as innkeepers' recognizances, for the years 1823-1830 and 1855-1865. A few other documents relating to the excise laws were filed with them during the latter period.
